Head Brewer - Dayton

Job Title:  Head Brewer
Location:  Dayton, Ohio – Production Plant
Reports to:  Brewmaster

Brewer Job Summary
:
The Head Brewer will be responsible for supervising, organizing and schedule labor and raw material so that quality and flavor profile are insured and that forecasted sales demand volume is met by brand and package type.

Essential Job Duties and Responsibilities: (Additional duties may be assigned)

  • Staff training on the following items:
    • Milling in/mill maintenance
    • Brew house operations
    • Tank cleaning/sanitation
    • Centrifuge operation
    • General maintenance/QC
  • Assist Brewmaster in staff fulfillment/maintenance
    • Interview/hiring of potential candidates
    • Annual reviews of each team member
    • Recommendations of any staff discipline (up to and including termination)
  • Supervising the writing and editing of written SOP’s for all functions in the brewery starting with milling in and through the packaging process.
    • Must maintain printed and electronic copies of SOP’s
    • SOP’s must be updated annually (or as needed) to reflect any changes made to procedures in the brewery
    • All staff members must be presented with copies of up to date SOP’s and signed and dated by employee as a signal that training on a given task is complete
    • All signed SOP forms must be submitted to the employees file/record in the office
  • Cultivate a culture of safety/safe operational processes 
  • Insure staff uses PPE and follows all lock out/tag out protocols and safety procedures.  
  • Monitoring of fermentation tanks on a daily basis
    • Adjustment of tank temperature based upon the following criteria:
      – Gravity
      – Time
      – Dry hopping
      – Yeast cropping
  • Monitor yeast generation – order as necessary
    • Yeast ordering is the prerogative of the head brewer.  Yeast selection is the prerogative of the Brewmaster
  • Write the production and packaging schedules on a monthly basis considering the following criteria:
    • Current inventory levels
    • Current month’s remaining demand
    • The demand forecasted for the month the schedule is being written
    • The demand forecasted for the month following the schedule
    • Labor availability
    • Raw material availability
    • Tank availability
    • Release points for upcoming seasonal/one off specialty brands
    • Post schedule to google.docs page copy in all brewery team members, quality control, spent grain haulers, head of sales, warehouse manager
  • Order raw materials based off the schedule on a monthly basis using the following criteria:
    • Current inventory levels
    • Remaining production in current month
    • Production/Packaging scheduled in upcoming month
    • Lead times
  • Weekly grain transfers from warehouse to brewery
    • Specific dates should be used to let warehouse know when a particular raw material is required at the brewery
  • Monthly Inventory submitted to the Brewmaster and to accounting
  • Schedule weekend cellar monitoring
    • Record and monitor tank temperatures
    • Record any gravity checks
    • Insure water tanks are full and hot/cold respectively for start of week
    • Boiler off for end of week/on for beginning of week
    • Monitor glycol system to insure that it is operational 
  • Additional responsibilities as assigned by the Brewmaster.


Education and Experience:  

  • Bachelor’s degree or equivalent
  • Brewing diploma/certificate
  • 4 years minimum experience in the brewing industry
  • Previous experience managing staff and writing production schedules
  • Ability to use excel
  • Excellent communication skills
  • Excellent record keeping skills

Working conditions:

The job requires work in extremely hot/humid conditions as well as cold/damp conditions.  It will also require the ability to lift 50+ lbs regularly with long periods of standing.  It is repetitive work with few breaks.  Additionally, it requires the ability to sit and do computer work periodically as well as meet with brewery management to discuss issues of need in terms of staff, tools, maintenance, and interaction with other departments.   Finally, the ability and willingness to fill in operational roles on the production or packaging teams is required during staff vacations, illnesses, injuries or during periods of transitions on the team.
